Raspberry Oatmeal cake


  • 3.5 cups old-fashioned oats
  • 4 eggs
  • 1 cup raspberries
  • 3 ripe bananas, mashed
  • 1/2 cup honey
  • 1/2 cup vegetable oil or butter
  • 1/2 cup sour cream
  • 2 tbsp flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp powdered sugar


  1. Preheat the oven to 350°F or 180°C.
  2. In a big bowl whisk the eggs with honey. Add mashed bananas, sour cream, vegetable oil, and vanilla. Mix well.
  3. Add 3.5 cups of oatmeal and mix. Set it aside for 10 minutes.
  4. Meanwhile,  mix flour and baking powder in   a separate bowl, add  into the bowl with the oats. Mix again into a batter mixed well. Add fresh raspberries.
  5. Either lay out parchment paper or use baking spray on 9 by 5 inch  loaf pan. Add the batter into the pan.
  6. Place the pan into the preheated oven and bake for 30-45 minutes. Poke a toothpick into the cake, if  it comes out with no batter on it, it is ready.
  7. Take the cake out of the oven and let it cool. Sprinkle with powdered sugar, garnish with fresh raspberries  and serve.
